Sweet’n’Crunchy Quinoa Salad

This one is so ridiculously chock full of nutrition and so incredibly good!  Batten down the hatches.  They’ll be coming from miles for this one!

INGREDIENTS

3 cups cooked Quinoa (about 1.5 cups dry)

2 Tbsp Extra Virgin Coconut Oil or Extra Virgin Olive Oil

1 Pink Lady Apple (or other apple of choice), cored and diced

1/2 cup small chopped Carrot

1/2 cup small chopped Celery

3/4 cup Dried Cranberries

1/2 cup chopped Walnuts or Pecans

Juice & zest of 1 Naval Orange

3 Tbsp Honey

S&P, to taste

INSTRUCTIONS

If using coconut oil, stir it into the warm quinoa so it melts and evenly coats it.

Mix together all ingredients.

Cover and chill 1-2 hours (or until ready to serve) to allow salad to cool and flavors to meld.
