Scrumptious Sweet Pepper Salad

This sweet pepper salad is good to be used on the side or even as a condiment.

Ingredients

1 Red Pepper, sliced ¼” thick

1 Orange Pepper, sliced ¼” thick

1 Yellow Pepper, sliced ¼” thick

½ Red Onion, sliced ¼” thick

3-4 tbsp Extra Virgin Olive Oil

¼ cup Red Wine Vinegar

2 Garlic Cloves, finely minced

1 tsp Dried Oregano or 1 tbsp Fresh

Sea Salt to taste

Instructions

Combine all ingredients in a large sealable bag or mixing bowl.  Stir until well combined.

Allow to marinate for 30 minutes or more (preferably several hours to really meld those flavors).

Serve chilled or at room temperature.  Refrigerate up to 2-3 days.
