Raw Decadent Chocolate Pudding

Serves 4-6.

The perfect “ole standby” – this recipe is quick and easy and can be stored in the fridge for several days to have on hand when those sweet-and-chocolate cravings hit.

This is a very delicious and very rich chocolate pudding.  A quarter to a third cup is usually more than plenty for anybody.

Ingredients

Pudding

2 Organic Avocados

½ cup Unsweetened Organic Cocoa Powder

½ cup Organic Agave Nectar

1 tsp Pure Organic Vanilla Extract

Topping

10 – 15 Fresh Strawberries, halved or quartered

½ tsp Stevia

2-3 tbsp Water

Instructions

Place strawberries in a plastic storage bag with stevia and water.  Set aside in the fridge overnight to allow strawberries to create their own sauce.

In a food processor fitted with the S-blade, combine all pudding ingredients and process until smooth and creamy, raking down sides as needed.  Mixture will be thick.  If you would like to thin it out with water or almond milk, you may do so now but we usually enjoy it just the way it is.

Transfer into serving cups and chill.

Pour strawberry topping onto puddings immediately before serving.
