Orzo Primavera

Primavera is really a term that refers to the spring vegetables used in this dish. If you don’t have or don’t like any of those featured below, feel free to swap them out for other alternatives that you would prefer.

You may even substitute all of these vegetables for 4 cups of your favorite mixed vegetable blend.

Ingredients

4 cups prepared Orzo or other pasta of choice

1 Yellow Onion, diced

4 Garlic Cloves, minced (about 1 tbsp)

2 tbsp good Extra Virgin Olive Oil, plus extra for finishing

1 cup Frozen Cut Green Beans

1 cup Frozen Broccoli Florets

2 cups Frozen Peas & Carrots Blend

Sea Salt and Fresh Cracked Pepper, to taste

Instructions

Prepare pasta as per package instructions.

Meanwhile, sauté onions and garlic in a large skillet, stirring occasionally, until the onions start to smell fragrant and appear translucent.

Add 4 cups of cooked and strained pasta to your skillet with your vegetables and stir to incorporate.

Salt and pepper to taste.

Finish with Extra Virgin Olive Oil and vegan parmesan, fresh grated Asiago or Parmesan.
