
Day 25 on my current raw food fast and this one definitely hit the spot. I LOVE how the creamy avocado plays off the heat and acidity in the kimchi! The zucchini certainly made a nice addition to round out this meal!
If you don’t have all these ingredients on hand, fret not. Just stuff it with what sounds good and roll with it!

Nosh-Worthy Nori Wrap with Gingered Zucchini

Ingredients
- 2 sheets Nori
- 1 serving Tempeh
- 1/2 Avocado
- 1/4 cup Shelled Edamame
- 1/4 Sweet Red Pepper thinly sliced
- 1/8 Red Onion or to taste, thinly sliced
- 1/4 cup Cleveland Kimchi or raw kimchi of your choosing
For the Side
- 1 Zucchini chopped small
- 2-3 tsp Bragg's Liquid Aminos
- Fresh Grated Ginger to taste
- Charnuska (Black Sesame) to garnish, optional
Instructions
- Toss chopped zucchini, Bragg's and ginger in a small bowl then plate, topping with optional Charnuska.Place all filling ingredients inside nori. Roll that baby up and nosh away!

Really, just fill it with whatever the heck you want. This combo was just hit the spot for me today.
