Israeli Salad

Serves 2-3. Who says lettuce has to steal the show in a salad? This salad boasts the fresh taste of cucumber in the company of a slew of delicious, colorful fruits and vegetables. Simple and simply gorgeous! A must try in my book!

Ingredients

3 large Tomatoes, diced

3 medium Cucumbers, quartered lengthwise and chopped

1 Sweet Red Pepper, finely chopped

½ Small Onion, finely chopped (I like Sweet Yellow/Vidalia)

7 Large Lettuce Leaves (I use Romaine), chopped

3-5 Radishes, finely chopped (optional)

½ Lemon, juice only (1/4 cup or more Red Wine Vinegar also makes a delicious substitute here)

4 tbsp Extra Virgin Olive Oil

Salt & Pepper to taste

Instructions

Combine all ingredients in a medium-large mixing bowl. Enjoy immediately.
