Couscous Pilaf

Badabing badaboom! Rock it out with this quick and easy pilaf!

Ingredients

1 cup French Couscous

1.5 cups Vegetable Broth or Water

1 16 oz. package Mixed Vegetables

3-4 tbsp Extra Virgin Olive Oil, or to taste

1 tsp Seasoning Salt of Choice, or to taste (we like Herbamare but we’re flexible)

    OR Sea Salt & Fresh Cracked Black Pepper, to Taste

Instructions

In a small sauce pan, bring broth or water to a boil.  Turn off heat and stir in couscous.  Allow to sit 5 minutes.

Meanwhile, toss mixed vegetables in a large skillet over high heat with 1 tbsp of oil to heat about 5 minutes or until hot.

Stir couscous into mix vegetables.  Add seasoning and extra oil to finish.  Serve immediately.
