Chocolateasy Energy Bites

If you happened to have your eye out for a super easy, power-packed snack to drop in the kids lunch boxes (or have stashed in the fridge), look no further.  These definitely fit the bill.

…and don’t you dare set out to make them yourself!  Our kids had a blast getting in the kitchen to help make these!

Makes roughly 50-55.

Ingredients

2 cups Rolled Oats

1 cups Walnuts

1/3 cup Raw Cacao

1 lb package Medjool Dates, pitted

1/4 cup Peanut Butter or Nut Butter of Choice

2 tbsp Flax Seeds

1 1/3 tbsp Chia Seeds

2-4 tbsp Water, to help bind

Instructions

Place all ingredients in food processor and pulse or process until balls of your “dough” start to form.  Be sure to stop and scrape as necessary.

Using a teaspoon, scoop out your dough and roll into balls, placing on a lined cookie sheet, being mindful not to let the balls touch.

Chill uncovered and eat as desired.
