Black-Eyed Pea Salad

Yeah, you heard me.  B l a c k – E y e d   P e a  S a l a d .

Seriously, this is my favorite way to eat black-eyed peas.  Like, just leave the fork in the dish and back off.  I’ll be done when it’s gone.  Okay?!

 

Ingredients

4 cups cooked & cooled Black-Eyed Peas

¾ Red Pepper, Diced

¾ Yellow Pepper, Diced

2 small Celery Stalks, finely chopped

3-5 Tbsp Red Wine Vinegar

3 Tbsp Extra Virgin Olive Oil

¾ tsp Dried Thyme Leaves

Sea Salt & Fresh Ground Black Pepper, to taste

Instructions

Place all ingredients in a medium mixing bowl.

 Stir it all together.

Cover and chill for approximately one hour for best flavor.

Bada-bing Bada-boom.  You have yourself an awesomely, addictively delicious black-eyed pea salad.
