Black Bean & Sweet Potato Burgers

Makes 4 patties. These are incredibly simple and a great alternative where you’re trying to add more plant-based nutrition into the family’s diet. Our family loved these! I really love how ridiculously easy they are to make.

Ingredients

1 can Organic Black Beans OR 1 1/2 cups prepared Black Beans, rinsed and drained
1/2 cup Sweet Potato Puree (simply pre-bake a sweet potato and mash with a fork. May also substitute canned sweet potato puree)
1 Egg
2 slices Ezekiel Bread, finely crumbled
1-2 tsp Chili Powder
3/4 tsp Sea Salt
Extra Virgin Olive Oil or Coconut Oil, reserved for cooking

Instructions

Place beans in a medium mixing bowl and mash well with a potato masher or a large fork. (Don’t worry about it being overly mashed. The texture variance improves the end result.) Mix in remaining ingredients and divide into four sections.

Lightly coat the bottom of a large non-stick skillet or cast iron griddle with oil. Place patties in pan and cook over medium heat, flipping every 3-4 minutes to prevent burning. Cook approximately 10-12 minutes just to make sure the patties are cooked through. Alternatively, you can spread the cook time by misting or lightly brushing with oil and throwing them on a Foreman Grill.

Top and serve as you would any other burger with ketchup, mustard and the works or kick it up with mashed avocado and salsa.

Serving suggestions: Pair with fire-roasted corn, grilled mixed veggies or roasted potato wedges.
